Polynesian Salad

Cathy Lea

We usually take a few cans of turkey or chicken with us. The recipe folders on the top of the Chicken and Turkey cans from Costco usually have some good ideas, that's where this came from. This would be good with leftover roast chicken from the deli also.

Ingredients

1 cup Chopped turkey or chicken, from the deli or a can
 1/2 cup diced celery
 1 chopped apple
 1 cup pineapple chunks
1 1/2 cup seedless grapes, halved
 2 teaspoons toasted sesame seeds
 5 Tablespoons mayonnaise
 1/2 teaspoon curry powder

Directions

Combine turkey, celery, apple, pineapple, grapes and 2/3 of the sesame seeds in a large bowl. Mix the mayo and curry powder, pour over turkey mixture and mix together. Sprinkle the rest of the sesame seeds on top when you serve it.

Note

You may notice that some of our recipes do not contain exact measurements for all ingredients. Cooking on the road is an art more than a science. We view each recipe as only a suggestion - a starting point for your own personal creativity.

We aren't usually dealing with food chemistry in these recipes since we aren't baking with leavening, etc., so feel free to use as much or as little of any suggested ingredient. Be creative and imaginative! Substitute the foods you like or have available for the ones in the recipes. And if you find something that turns out well for you, please share it with the rest of us.
